Learn How To Make Candied Sweet Potatoes
This side dish is perfect for Easter, Thanksgiving or Christmas and goes well with ham or turkey. Very easy to make and most kids will love it. Although not a very sound dish as far as nutrition, it does have a great vitamin C boost.
3 large cans of sweet potatoes (or yams)
1 can frozen concentrated orange juice (slushy and undiluted)
1/2 cup sweetened condensed milk
1/2 cup coconut flakes
marshmallows
1/2 stick butter
nutmeg
cinnamon
Preheat oven to 350 degrees. In a mixing bowl, add sweet potatoes, juice, coconut flakes, and milk. Whip with a beater until smooth (it's okay if it seems sort of runny, cooking will change it later). Pour into a rectangular cassarole dish and sprinkle nutmeg and cinnamon over the top. Cut butter into pats and place on top of this mixture. Place in oven for 30 minutes and take out. Cover the top with marshmallows and put back in oven for 5 minutes. Take it out and let cool 10 minutes at least then serve.
