Simple, Tasty Fruit Crumble

You can vary this dessert by choosing whatever type of fruit pie filling you want. Options usually available in most markets are cherry, blueberry, and apple. You can also combine fruit as this recipe calls for 2 cans of filling to create dishes such as cherry-apple, apple-blueberry, or blueberry-cherry.   • 1 cup uncooked oatmeal
  • 2/3 cup brown sugar
  • 1/3 cup flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/3 cup butter
  • 2 cans of fruit pie filling of your choice (or make your own)
  • Grease a 9 inch square pan and preheat the oven to 350 degrees.

    In a mixing bowl, mix oatmeal, sugar, flour, cinnamon, and nutmeg. Cut in butter and fold into mixture until crumbly.

    Pour fruit filling into greased pan. Sprinkle crumble mixture evenly over the top of the fruit. Place in oven for 40 minutes. Serve warm and with whipped cream or vanilla ice cream.

    If you wish to create your own pie filling, use this recipe:

  • 2 lb of fresh fruit (sliced, skinned, pitted and/or de-seeded)
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 stick butter
  • 2 tbs corn starch
  • 1 cup water
  • In a pot, melt butter. Stir in lemon juice and sugar and stir until sugar is dissolved. Pour in fruit and stir over low heat. Cover and let simmer for 15 minutes, stirring occassionally. Mix corn starch and water until blended well, pour into fruit mixture and stir until mix is thickened. Remove from stove and let cool.
