Make Your Own Carrot Mashers

This one is for people who must cook for fussy people who need to eat their vegetables, but are too picky. Carrots are excellent sources of beta carotene, Vitamin A and C, and fiber.

15 cleaned and sliced carrots
1/2 cup raisins
2 cups orange juice
2 tablespoons butter
1/2 teaspoon salt

Clean and slice 15 carrots. Place in a saucepan with the orange juice, butter and salt. Cook on medium high heat with the lid on for 15 minutes, stirring on occasion.

Strain the carrots from the juice, but do not discard the juice. Place the raisins in the hot liquid and cover with the lid. Soak for 5 minutes.

In a bowl, mash the softened carrots as you would mash potatoes [or use a ricer.] Stir into the mashed carrots the raisins and 1/4 cup of the reserved juice.

This should serve 4 people.
