Vegetable Dishes
With some many different vegetables to choose from that can be eaten in its natural state, the choices used in cooking with these vegetables either singularly or with a variety make your choices unlimited.
A standard way in cooking fresh vegetables just requires boiling a pot of salted water and adding the vegetable with an uncovered lid for approximately 5-10 minutes, depending on the heartiness of the vegetable at hand. Roasting, broiling, grilling are also options instead of boiling or eating fresh.
Some vegetables just don't taste right unless cooked, like many squashes, potatoes, or root plants. Greens, onions, peas can be eaten fresh, but most people prefer them cooked.
The longer you cook a vegetable, the more you cook out the vitamins, minerals and fibers which is what makes it good for you in the first place. You don't want to end up with an overcooked mush deficient in the good stuff, including flavour which is extremely salted and covered heavily in butter or a sauce. At that point you may as well be eating a bag of crisps or candy.
While these recipes are listed under vegetable, read carefully if you are a vegan because some may contain meat or meat by-products.
