Sweet Potato Pie
- 2 cups cooked and mashed sweet potatoes
- 2 eggs
- 1 1/4 cups evaporated milk
- 3/8 cup white sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 4 tablespoons melted butter
- 1 (9 inch) frozen pie crust (available at most grocery stores)
Preheat oven to 425 degrees Fahrenheit.
In a blender or food processor, add sweet potatoes, evaporated milk, sugar, salt, cinnamon, nutmeg, eggs and butter. Blend until smooth and pour into pie shell.
Bake for 10 minutes then reduce heat to 300 degrees Fahrenheit. Bake for about 50 minutes or until the filling is firm.
Allow to cool for at least 30 minutes before serving. Goes well with vanilla ice cream or whipped cream.
