A sauce is sort of generic for any smooth liquid which is meant to be poured on top of another food item to enhance its flavour. A sauce can be hot or cold. Both gravies and dips are sauces by default, but serve a particular function.
A gravy is almost always hot and served with a meat dish. Although there are vegetarian recipes which use "gravies" a true gravy is made with drippings from meat. Vegan "gravies" are a sauce.
A dip is exactly what it implies, something meant for one to dip food items into. It is bad manners to use a community dip more than once on a same item (double dip), but if you have that habit it is better for you to spoon some of the dip onto your own special plate or bowl for your personal usage. Dips can be hot or cold, but most are cold.
Salad dressings are not exactly a sauce nor a dip, but belong in this category as they are a liquid which is poured onto a food item to enhance its flavour.
Spreads such as mayonnaise and hummus are in this category because they are often used to enhance the flavour of another food item.
