Salmon Dream Recipe

This recipe is ideal if you are looking for a different way to prepare salmon. It is perfect for warm weather as it is best served cool. The best part about it, you can fix it up to two days in advance. This will serve 4-8 people depending on how many pieces will be eaten per person.

Salmon

1 lb salmon filet cut into 8 sections
1/2 cup lime juice
1 tablespoon salt
1 tablespoon of black pepper
4 tablespoons olive oil

Dressing

2 tbs mayonnaise
2 tbs Dijon mustard
1 tsp lime zest
1 cup sour cream

In a shallow baking dish, place the cut up pieces of salmon. Massage both sides of the fish with the olive oil. Pour the lime juice in the dish and expose both sides of the fish to the liquid. Let soak for 10 minutes.

Remove each piece after soaking and place each piece onto aluminum foil (enough foil where each piece can be properly wrapped). Sprinkle salt and pepper on each piece and wrap tightly.

You may grill this on a barbecue grill on coals where the flame has stopped for at least 15 minutes and is simmering at a medium high temperature or place in your oven which has been preheated at 450 degrees F. Either way, cook the salmon for 15 minutes and remove from heat leaving it in the wrapper for about 5 minutes to finish cooking then place wrapped units in the refrigerator until ready to serve (this will keep for up to 2 days).

For the dressing, add all the ingredients in a mixing bowl and stir until it is all blended evenly. Cover and refrigerate until ready to use.

When serving, place a 2 tablespoon serving on the plate. Unwrap the salmon and place it on top of the dressing, skin side up. Anyone wanting more of the dressing can help themselves to the remainder depending on their personal tastes.

This goes great with any vegetable salad, rice pilaf, or potato salad.
