Port Wine Cheese Roll
- 2 tablespoons port wine
- 12 ounces cream cheese
- 1/2 cup grated cheddar cheese
- 1/2 cup toasted pine nuts, or potato chip crumbs, or chopped pecans
In a small saucepan over low heat, add the cheeses and let melt together while constantly stirring. When evenly blended, remove from heat and let cool for about 5-10 minutes until it starts to gel up.
On a piece of wax paper, roll out the cheese in a rectangular shape. Lightly carve in lines in which to pour the wine, but be sure not to let the lines stray to the ends or the wine will run off the cheese. Work quickly before it gets too cool.
Starting from one end, roll up the cheese going towards the other end until it resembles a log. Spread nuts or chip crumbs on the paper and roll the log onto until it is coated on all sides. Wrap in wax paper and let refrigerate for at least an hour before serving.
