How To Make Pancakes From Scratch

3 eggs
1 1/2 tsp baking powder
3/4 cup cold milk
3/4 cup sour cream
2 tbsp iced water
1 cup plus 2 tbsp flour
3/4 cup butter melted and brought to room temperature

Combine eggs, milk, water, and sour cream and stir well. Combine dry ingredients and gradually add to wet mixture then stirring until smooth. Some lumps are okay in the batter.

For each pancake pour about 1/4 cup batter onto very hot and lightly greased griddle. Turn pancakes when tops are covered with bubbles and the edges are semi-firm.

Makes about 16 pancakes.
