Create an Easy Meatball Soup

1 quart beef stock
1/4 pound ground beef
1/4 pound ground turkey
1/2 cup Pastina pasta [little pearl-like pasta]
1 cup spinach
12 ounce can whole tomatoes
1/4 cup sliced mushrooms
salt
1 tablespoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon sage
1/2 large onion sliced
Olive oil

In a mixing bowl, combine ground beef and turkey. Mix into the meat the pepper, garlic, onion, oregano, thyme, sage, and about 2 tablespoons of salt [less if you are on a salt restricted diet.] Form into small, tightly packed, meatballs and set aside.

In a large soup pot, cover the bottom with olive oil and heat over medium high heat until it is really hot. Add the onions and cook until they are translucent. Remove onions and set aside.

Add the meatballs to the pot. Fry until they are brown and cooked. Remove meatballs. Drain the grease from the pan, but leave in any solid drippings from the meat.

Pour in the beef stock and add to it the onions, meat, spinach, and mushrooms. Cook on medium heat for 30 minutes.

Cut the whole tomatoes in half and scoop out the seeds. Add to the soup and let simmer for 5 minutes.

Add the Pastina to the hot mixture and let cook for another 10 minutes. Remove from heat and serve.
