Mashed Potatoes

This is the recipe for those who like the smooth textured type of mashed potatoes one usually associates with the boxed flaked variety. Generally very picky eaters will like this recipe as it is so simple, but to many potato lovers, this may be a bit bland. For those who want mashed potatoes with more attitude, try Smashed Potatoes

Peel potatoes and cut into 2-inch pieces. In a large heavy saucepan simmer potatoes in salted water to cover by 1 inch until tender and drain in a colander.

In a mixing bowl add the butter and 1 cup milk. Add potatoes to the bowl. Get a masher to mash the potato chunks into the liquid. Using an electric beater, beat this on a high setting for 5 minutes or until the potatoes are smooth.

Place mashed potatoes back into pot with 1/2 cup milk and reheat potatoes over moderately low heat while stirring.
