Traditional Macaroni And Cheese
There are some who love tradition and the stuff in the box just won't cut it. Of course, you could always use the above recipe and eliminate the box altogether if you replace it with 3 cups of dry macaroni and in the cheese sauce use 1 tablespoon of corn starch mixed in with 1/4 cup of milk and add it to the melting cheese.
Then there is the method that is a bit more old fashioned that involves baking it.
- 3 quarts water
- 2 tablespoons salt
- 3 cups macaroni
- 1/2 stick butter
- 1 cup evaporated milk
- 1 cup grated cheddar cheese
- 1/2 teaspoon ground mustard
- 1/2 teaspoon cayenne powder
- 1 cup Panko bread crumbs
In a large stockpot, boil 3 quarts of salted water. Once boiled, add the macaroni. Let boil uncovered for 10 minutes and drain the water.
Remove the pasta into a baking dish and let sit.
Preheat oven to 350 degrees Fahrenheit.
In the pot you just used, add the butter and let it melt. To that, add the milk, mustard, and cayenne powder. Let it boil slightly. To that, add the cheese. Stir in until it is melted.
Pour cheese mixture over the pasta and bake in the oven for 20 minutes. Pull out long enough to cover the top with Panko bread crumbs and put back in for another 5 minutes.
This should serve 4-6 people.
