Thai Fried Rice - Khao Pad Servers 4 Prep Time: 15 minutes Cook Time: 10 minutes Ingredients: Quantity 6 cups steamed jasmin rice (preferably from the day before) 3 tbsp cooking oil 3 onions, finely sliced 3 cloves garlic, finely chopped 1 tsp sugar 1 tbsp red curry paste 300 grams chicken breast, sliced (or prawns, pork, beef) 3 eggs, lightly beaten 3 tbsp fish sauce 100g green beans, sliced 1 tomato, chopped 2 tbsp spring onions, chopped 1 cucumber, sliced (for decoration) 2 limes, cut in half (for decoration) 1 tomato, sliced (for decoration) Method: 1. Heat the oil in a wok. Add the garlic and stir-fry until golden. 2. Add sugar and curry paste and stir-fry. 3. Stir in the meat or prawns. Push to one-side of the wok. 4. Add beaten eggs (use a little bit more oil if necessary), stir until cooked. 5. Add rice. Sprinkle with fish sauce. Add beans, onions, springs onions and chopped tomato. Stir-fry until heated through. 6. Decorate with lime, cucumber, tomato and serve.
