A Simple Butter Rum Apples Recipe

4 large apples
1/2 cup dark rum
1 cup dark brown sugar
1 tablespoon instant coffee
1/4 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup butter

Peel, core and slice the apples into rings.

In a medium frying pan on medium heat, melt the butter and add the sugar, coffee, cinnamon, and vanilla until it starts to bubble. Remove from heat and stir in rum. Return to low heat and simmer for 2 minutes. Watch carefully so it does not burn.

Add apples and cook apples until tender, basting apples occasionally.

This is perfect to serve alone or as a topping for vanilla ice cream.
