Blue Cheese Green Beans 1 oz. blue cheese, crumbled 3 tbsp. half and half 2 tbsp. white wine vinegar 1 tbsp. grated Parmesan cheese 1/2 tsp. dried whole oregano 1/4 tsp. coarsely ground pepper 1/8 tsp. sugar 1/4 cup vegetable oil 1 pound fresh green beans 1/4 tsp. salt Freshly ground pepper to taste 1 (2-oz) jar sliced pimiento, drained 1 oz. blue cheese, crumbled 4 slices bacon, cooked and crumbled Combine first 7 ingredients in container of an electric blender. Top with cover, and process until smooth. With blender running, add vegetable oil in a slow, steady stream. Process just until blended; set dressing mixture aside. Wash beans; trim ends, and remove strings. Cook beans in a small amount of boiling salted water 15 to 20 minutes or until tender; drain. Arrange beans on a serving platter. Sprinkle with salt and pepper. Pour blue cheese dressing mixture over beans (the picture shows the beans laid horizontally across the platter, and the dressing mixture being poured in the down the middle of the platter). Top with pimiento, 1 oz. blue cheese, and crumbled bacon. Yields 4 servings.
