A Beef Sausage Recipe
This is a recipe for beef sausages for those who cannot eat pork for religious or dietary reasons.
- 6 lbs. lean ground beef
- 1/2 cup finely chopped onions
- 2 smashed cloves of garlic
- 4 tsp. salt
- 3 tsp. sage
- 3 tsp. black pepper
- 1 tsp. cayenne powder
- 3 cups bread crumbs
- 1 cup ice cold water
- gelatinized meat casings
In a large bowl, mix all ingredients thoroughly. It is important that the water is very cold to keep the meat pliable and it also changes the texture. Gently stuff the meat into the casings.
Twist the casing at 4-6 inch points depending on how long you want the end product to be. Wrap it in butcher's paper and keep refrigerated until you are ready to use it. It will keep up to 1 week. They may also be frozen if you additionally wrap it in a freezer safe storage container for up to 3 months.
When ready to use, put sausages in boiling water for about 1/2 hour. This can be served on a bun or with a side of potatoes.
Alternatively, you can poke holes in the sausage with a fork and fry it in a pan with a little bit of oil for about 15 minutes on each side. This could be served with fried potatoes or eggs.
Also, you can broil or grill these sausages.
